Description

At Fitts Farm, we believe that understanding where food comes from — and how it is responsibly produced — is an essential part of sustainable living. Our Humane Poultry Processing Course provides an educational and hands-on experience designed to teach the respectful, efficient, and safe processing of chickens raised for personal or small-scale farm use.

This course combines classroom discussion with live demonstration, guiding participants through each step of the process — from humane handling and dispatch to scalding, plucking, evisceration, chilling, and packaging. We emphasize humane practices and stress-free handling methods that align with our farm’s philosophy of care and respect for all animals.

Participants will gain a working knowledge of safe food-handling procedures, proper sanitation, and biosecurity protocols that ensure meat quality and consumer safety. Regulatory guidelines and labeling requirements will also be discussed, giving attendees insight into what’s needed to process poultry for family use or limited direct sale under Florida’s small farm exemptions.

Beyond the technical instruction, this course encourages participants to reflect on the deeper connection between the animal, the land, and the food we share. By developing skill and confidence in humane slaughter, students leave with both the practical ability and ethical awareness necessary to raise and process poultry responsibly.

Course Topics Include:

  • Humane handling, dispatch, and bleeding techniques
  • Proper scalding, plucking, and evisceration methods
  • Recognizing internal health indicators and processing quality
  • Safe chilling, packaging, and storage practices
  • Sanitation and waste management systems for small farms
  • Florida regulations for on-farm poultry processing

Who Should Attend:
Small farmers, homesteaders, agricultural students, and anyone seeking to deepen their understanding of farm-to-table poultry production. No prior experience is required — only a willingness to learn and participate respectfully.
